Spaghetti Western Recipe Round-Up - Everyday Southwest (2024)

Time flies when you are having fun! And since Spaghetti Western Week is far too short (really, there is only so much ravioli a girl can eat in a week), I put together a round up of some of our other Italian influenced recipes that are already on our blog... just in case you missed a few. I've also included links to some of our food blogging friend's Spaghetti Western inspired recipes. There are healthy recipes, vegetarian recipes and a VEGAN recipe included in the mix as well. So, if you see a recipe you like, just mosey on over to their blog for the complete recipes.

Be sure to come back! We have one more recipe coming this week to finish up the celebration. You won't want to miss it!

To start the Spaghetti Western Recipe Round-Up, we've got my award winning

Tuscan BLT Guacamole Tostado Bruschetta Bites

Yes! Really! They won a major award! (pictured above)

If you are feeling more like a Southwest style calzone, check out my

Butternut Squash Ricotta Empanadas

The most beloved Spaghetti Western recipe has to be Southwest lasagna... or Italian enchiladas... lasagna... enchiladas... oh well, you decide!

Southwest Pumpkin Lasagna

Dan's Enchilada Casserole

by Andrew at Eating Rules

His recipe is a healthy, vegetarian version of an enchilada casserole. Looks like lasagna to me!

Greek Pasta with Mizithra Cheese

by Elena at Olive Tomato

Ok! So it's Greek! But, it is definitely WCEWE (What Clint Eastwood Would Eat). I LOVE all the mizithra cheese!

What? You haven't tried mizithra cheese? Hurry! Go get some!

Southwest Mac and Cheese with Optional Chicken

by Karen at Kitchen Treaty

You didn't think we were going to leave Southwest Mac and Cheese off the list did you? Is there any other kind of pasta?

I think not.

Butternut Squash and Caramelized Onion Enchilada Casserole

by Kirsten at Farm Fresh Feasts

Oooo... with a healthy butternut squash filling, you can afford to put more cheese on top!

Kirsten has got you covered.

Zucchini-Refried Bean-Corn Enchiladas

by Kirsten at Farm Fresh Feasts

These Southwest lasagna style enchiladas are big favorites at the family table.

Mexican Chicken Lentil Rice Bake

by Kirsten at Farm Fresh Feasts

I bet you thought she was going to use beans... that wouldn't be very Italian of her. Lentils are a perfect match.

Salsa Verde, Pork Steak and Oaxaca Cheese Pizza

by Kirsten at Farm Fresh Feasts

Salsa Verde? and pork? on a cheesy pizza? A Spaghetti Western dream... in black and white, of course.

Fish Taco Enchiladas

by Kirsten at Farm Fresh Feasts

Now, Fish Taco Enchiladas are something that even I, Southwestgirl, have never seen before. You've got to try it!

Mexican Pasta Salad

by Jessica at My Baking Heart

This is a perfect summer picnic, bbq, pot luck dish! Italian pasta and olives tossed with Southwest Pico de Gallo, black beans and...

wait for it... green chiles!

Clean Eating Slow Cooker Southwestern 2 Bean Chicken

by Tiffany at the Gracious Pantry

Ok, we might have to squint a little to see the Italian in this one but, that's ok. My vast and yet detailed knowledge of my beloved Southwest has the answer.

Did you know the Americas did not have chickens until the Italians (and Spaniards) brought them? Bet you didn't know that. Chicken is considered a "first contact food." Until Columbus and his merry men, there were only turkeys and quails and doves and such.

I know. Aren't you impressed?

Spicy Cilantro Pesto

by Lisa at Snappy Gourmet

How yummy is this?! I just want to take a bath in it. You have to ask yourself... "What Would Clint Eastwood Do?" Never mind.

Seriously, can't you see it on everything? Hot dogs? Hamburgers? Grilled Cheese Sandwiches?

Enchilada Beef Roll-Ups

by Aimee at Shugary Sweets

Ok, leave it to Aimee to go all fancy for a "Spaghetti Western Cook It For Clint Eastwood Dinner."

Wait a minute... didn't I hear he might be single again soon? Amiee? Did you hear the same thing?

You go girl!

Easy Cheesy Chilaquiles

by Kristin at Dizzy, Busy and Hungry

Chilaquiles are a favorite dish in these here parts. In fact, they might be one of the "original" Spaghetti Western dishes. Tortilla chips, layered in a tomato-y sauce with melted cheese and black olives... sound familiar? You may have heard of their cousin the "Frito Pie" which is one of my mom's favorite childhood dishes. Believe me, the little town in Arizona that she grew up in was plenty western enough!

Green Chile Vermicelli

by Cathy at Noble Pig

This is a Spaghetti Western Master piece! Can we just sit back and look at it? No? Does it make you too hungry? All right, all right!

Aimee may have some stiff competition for Mr. Eastwood's affections. This spaghetti has... bacon! Yep, bacon is the way to a man's heart.

Men. Love. Bacon!

Easy Baked Spaghetti Recipe

by Arlene at Flour on My Face

Now this is my kind of dinner! It's fast and easy and won't keep you in the kitchen while everyone else is out there having fun. Make the whole batch for a crowd or divide it in half and freeze for an even faster dinner another day.

Short Rib Enchiladas Recipe

by Aly at Cooking in Stilettos

Did she say, "Short rib enchiladas?" Talk about the way to my heart Oooops, I mean Clint's heart. There is nothing a cowboy loves more than short ribs and these are rolled up in yummy enchiladas with guacamole and salty cheese... yum!

Potato Chard Enchiladas with Roasted Chile Sauce

by Stephanie at The Culinary Life

Ok, I promised you healthy recipes and this one is amazing. It is gluten-free, vegetarian AND vegan! Maybe, I shouldn't have told you that. Maybe, I should have given you a test at the end of this post to see if you could guess which recipe fit all those categories. I know I never would have guessed. Look! They even have pepitas on top!

Spaghetti with Creamy Avocado Pesto and Roasted Tomatoes

by Aviva at The Six O'Clock Scramble

Holy "Healthy Spaghetti Western Recipe!" Aviva traded the cream in this classic Italian spaghetti with Omega 3 rich Southwest avocados. And look at that crunchy, roasted fennel. Who needs a loaf of garlic bread with that for a side dish?

Smoked Goat Cheddar Quesadillas with Green Garlic Crema

by Sabrina at The Tomato Tart

I love quesadillas! We practically live on them in the summer when it is too hot to turn on the oven. And, this might be the perfect recipe to wrap up our Spaghetti Western Week Recipe Round-Up with. Everyone considers goat cheese to be a fancy French thing. Well, I guess it is. BUT! It is also a Latin thing and a Southwest thing. Many of the families in the little Arizona town that my mom grew up in actually had goats in their front yards as late as the 1950's. Who knows? Maybe they are still there. The goat's milk was turned into homemade, "artisan before it was cool," cheeses and the best dulce de leche ever!

So, mosey on over to my friend's websites to check out their recipes. I hope you found something great for your own Spaghetti Western night or just to spice-up your family's dinner with something new.

But be sure to come back on Friday for our final tribute to Clint Eastwood (before next year's celebration, that is). You won't want to miss it!

We love hearing from you so be sure to leave us a comment on this post or follow us on Facebook. Don't forget to click on the little "like" button near the top/center of our Facebook Page so you will get updates about our new recipes in your Facebook news feed.

See you on Friday! Sandy
