Light and crispy chocolate wafers dipped in peppermint-infused white chocolate and then sprinked with crushed candy canes…..these are the ultimate holiday cookie. Easy to make No Bake Peppermint Bark Cookies are made with only four ingredients and no baking required. You will have trouble keeping these around.

Catalog season is upon us my friends. It’s serious. I have piles of kindling lying all over the house because I want to give them all a chance to win my love. But I can’t keep up. Seriously. Everytime I open the mailbox, at least half a dozen more come falling out. It’s a little insane. I have my favorites that I page through during the evening and then there are those catalogs that only come around once a year….National Geographic, anyone. And of course, I have to see what they’re selling because I have a special place in my heart for things found around the world. But I always, always gravitate to those with food first. It’s my absolute favorite thing in the whole world….food is. So, I like to see what’s new in the world of good eats and culinary creations. I love to see what new cooking tools and photo props I can spend my whole paycheck on. That’s how I found the inspiration for these No-Bake Peppermint Bark Cookies. They’re a total Williams-Sonoma Copy Cat!!!

The cookies I saw were completely drenched in smooth white chocolate, they were made from the same chocolate used for the famous Peppermint Bark everyone knows and loves. They looked to die for. I needed them immediately but didn’t feel like waiting two days for them to arrive. So, I raided the pantry and came up with this easy recipe anyone can make. Even an almost 4-year-old boy who has the attention span of a flea. Your kids will love helping with this one.

To make these No Bake Peppermint Bark Cookies, I used store bough Chocolate Melts and just threw them in the microwave for about a minute. Peppermint extract was added to the melted chocolate and then we dipped the wafer to coat. Sprinkle with the crushed candy canes and allow to cool on a wire rack. Does it get any easier than that? They taste exactly like a Thin Mint Girl Scout Cookie…..I kid you not. And if you know how addicting the Thin Mints are, you know that these will not last long in your house.

If you weren’t planning on baking this year but still want to give friends and family a gift from your kitchen, these No Bake Peppermint Bark Cookies are just for you. You don’t have to roll dough, you can give your mixer a break and the gas (or electric bill) will not be boosted up because you had to heat the oven. The only problem you will have is getting these cookies to their new homes before you eat all of them yourself. They go really well on a holiday cookie tray with classics like these Magic Bars and my favorite biscotti of all time.

Ingredients

  • 1 12 ounce package Ghirardelli White Chocolate Melts, or chopped good quality white chocolate
  • 1/2 teaspoon pure peppermint extract, not imitation extract
  • 1 9 ounce package Chocolate Wafer Cookies
  • 8 candy canes, crushed

Instructions

  • Pour the white chocolate into a small microwave safe bowl and melt in the microwave in 30 second intervals stirring after each cycle. Once the chocolate is melted, stir in the peppermint extract.

  • Dip the top of the wafer cookies in the chocolate to coat and set on a wire rack. Sprinkle with the candy canes and allow the cookies to cool until the chocolate is set.

  • Store in an airtight container for up to 5 days.

    The chocolate wafers are very thin and hard to coat and half of the package was broken when I got it. Is there a good replacement for it?

      Hi Barbara! The chocolate wafers have been discontinued so I found that Oreo Thins are a great replacement. They’re a little sturdier, too. Any chocolate wafers you find now have probably been sitting on a shelf for sometime. I’ll be updating the recipe when I can find some free time but in the meantime give the Oreo thins a shot.

      They’re by Nabisco, I think. I get them in the grocery store.

        I can’t find these wafer cookies anywhere. The only thing that comes up when I google Nabisco wafer cookies are the Nilla Wafers. Such a shame as I really wanted to like/try this recipe.

          Hi Amanda! We are all mourning the loss of the wafer cookies this season because they’ve been discontinued but I have been making them Oreo thins with great results! I wish you hadn’t given these a poor rating when you haven’t tried the actual recipe but I’ll be updating soon with the substitution. They taste like the Girl Scout Thin mints!
