Easy Southern Soul Food Mac n Cheese

Ingredients

  • 1 pound elbow macaroni, (3 cups dry)
  • 3/4 cup heavy cream
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • salt and pepper, to taste
  • 4 cups shredded cheddar cheese, divided
  • 2 cups shredded Monterey Jack cheese
  • 2 cups Colby cheese

Instructions

  • Preheat the oven to 350°F. Grease a 9×13-inch rectangular baking dish and set aside.

  • Bring a large pot of water to a boil. Sprinkle a pinch of salt and add the pasta. Cook according to until al dente (1 minute less than the package directions). Drain the pasta

  • In a medium bowl, whisk together the milk, heavy cream, eggs, garlic powder, cayenne pepper, salt, and pepper. Then stir in 2 cups of cheddar cheese, Monterey Jack cheese, and Colby cheese.

  • Add the cooked pasta to the prepared pan. Pour the milk and cheese mixture on top and stir to distribute evenly.

  • Sprinkle 2 cups of cheddar cheese evenly across the surface.

  • Bake for 30-35 minutes or until the top is golden brown.

  • Remove from the oven. Cool in the pan for about 10-15 minutes before serving.
